
Maddy and I bake together constantly. We love to do stuff like that and I feel that it bonds us and gives her good lessons for later in life. When I was asked to do the Betty Crocker Fun da-middles by My Blog Spark I was all for it. I mean really how could I go wrong with something that Maddy and I love to do together. Once it arrived we dove right in, got out my Kitchen aid mixer and went to work. I cut open the cupcake mix, Maddy poured it into the mixer, I measured out the ingredients and she poured those in too. Then we put the mixer into the lower/ready position, she locked it down and turned it on. While it was mixing Maddy went ahead and put the papers into the cupcake tray for me.
After we made sure it was mixed thoroughly I poured the batter into the cupcake papers, saving some to top the cupcakes after I add the filling, then came the fun part…da-middles. I took the package of vanilla filling, squeezed it the required number of times then cut the corner and squeeze some of the filling into each cupcake cup being sure it does not touch the sides then topped with remaining cupcake batter. I then popped them into the oven and let them do their thing. Those puppies did not last an hour in my house everyone went insane over them. They were so easy to make and so delicious that as soon as they are released I intend on stocking up on a bunch of boxes, these would make great lunch snacks for my kids going to school.
