We eat potatoes with our meals 4/7 days a week, sometimes I wish we could have it more but with having to peel them, cut them, cook them, mash them and serve them sometimes I just do not have enough time to make them so we have to settle for something else. I am very happy to say that I have now found a very good option to serve my family that still allows us to have potatoes but with less hassle to prepare and serve them. I talked about our meatloaf dinner with the casserole au gratin potatoes which my family goes crazy for. I have a couple other dishes that my family loves to have potatoes with and I have been able to use the Betty Crocker Specialty potatoes instead of fresh cut and peeled potatoes.
For the dish I made for this post we used the creamy butter potatoes which are a potato with a home style butter flavor, I made a few boxes because I knew that I was going to need lots of potatoes. Once they were cooked, which by the way takes no time at all, I put them into a bowl for each one of our family members, I topped them with chicken gravy, corn nibblets, cheese and popcorn chicken. We get a similar dish at a local fast food restaurant but I prefer to make it myself because then I know exactly what is in them.
If you are a busy mom and looking for new and easy recipes then I highly recommend you go to the BHG.com website in the Food & Recipe section called the Spud Hub. There you can find quick and easy ways to incorporate specialty potatoes into your everyday and Holiday dinners. The Spub Hub includes the following and is worth checking out I promise.
- A sweepstakes where moms can enter to win one of four $250 gift card giveaways to go towards their weekly shopping
- Meal solutions organized by ingredient
We just love Betty Crocker Specialty potatoes, if you are digging through my pantry one thing you will be for sure to see is boxes of these for when my family wants potatoes and I want more hands and more time.
I received coupons and monetary compensation for writing this post but all opinions expressed are my own.
