Frozen Strawberry-Marscarpone Pops

Prep Time: 15 min. plus freezing | Makes: 36 servings

What You Need

  • 2 cups water
  • 1/2 cup sugar
  • 1 env. (0.13 oz.) KOOL-AID Strawberry Flavor Unsweetened Soft Drink Mix
  • 6 to 8 fresh mint leaves
  • 1/2 cup mascarpone
  • 1 cup chopped fresh strawberries
  • 1 Tbsp. balsamic vinegar glaze

Make It
ADD
water to combined sugar and drink mix in 1-qt. pitcher; stir until mix is dissolved. Add mint; crush with back of spoon. Let stand 30 min. Strain drink into blender; discard mint. Add mascarpone to blender; blend until smooth.
POUR into ice cube trays sprayed with cooking spray, filling each of 36 sections 2/3 full. Freeze 30 min. or until slushy.
TOSS strawberries with balsamic glaze; spoon over mascarpone layers in ice cube trays. Insert mini wooden pop stick into center of each for handle. Freeze 1 hour or until firm.

Note: Look for mini wooden pop sticks in craft stores.

Substitute: Look for the balsamic vinegar glaze with the other vinegar products in your supermarket. If you can’t find it, you can use regular balsamic vinegar instead.
