I had the great opportunity to review the Make-Ahead Meals For Busy Moms cookbook, my family was getting bored of the same old meals but with our busy schedule it was hard for me to prepare something healthy, nutrious, yet quick to put on the table and eat.  This meal has become one of my main go to cookbooks for new things to try out.  It keeps my family happy by making new things and trying out new recipes, it keeps me happy because I can cook them great food that is good for them quickly and not worry about the junk that fast food puts into them.

Make-Ahead Meals cookbook is great in so many ways, the food is good, the directions are simple but my two favorite things are 1. She tells you right in the book to do the day before you need to cook this so I can do some food prep in teh evening before I “relax” for the evening and 2. she tells you how to freeze the recipes so that you can quickly pull them out and prepare them when you forget about dinner (i do sometimes until it seems to be too late to do all the prep).

My kids and Lee all love the Chicken Chimichangas (pictured here are the ones I made) and so do I.  They taste good, are fast to prepare and even faster to eat (great for slow boys on cub night). They are yummy although I did find them to be spicy and we have to omit all pepper involved in the recipe to make them edible to me and my two year old.  But Lee does like spice so i take some out for just him and make him some hot ones while making the rest mild for us.

Another favorite for my family is the Mini Cheesecakes, these are great to make and serve when you know you have company coming because they are smaller so you don’t need to dirty a fork and plate for them and you can make a variety of flavors with very little problems.

Honestly Make-Ahead Meals For Busy Moms has 208 pages worth of delicious healthy quick cooking and although I would love to sit and tell you about ALL of the recipes in this book but I think you need to get it for yourself and try them out.
