Panko Breadcrumbs and Celebrity Chef Chiarello

I’m not a very big fan of any type of seafood, OK so I’m not a fan at all lol. Because of this Lee and the kids generally make it when I’m not home. When I was away at Brandcation, that’s exactly what they did for supper the very first night I was gone.  Lee is writing most of this review because, well, obviously I didn’t partake in reviewing of this product.

First let me start by saying that Progresso Lemon Pepper Panko was the perfect pair for some pickerel (Walleye) fillets that I picked up fresh from a local grocery store. Panko is a Japanese word for Bread crumbs. The Lemon pepper panko is just that, Lemon Pepper seasoned bread crumbs. I find that when using bread crumbs on any type of fish as opposed to batter or anything like that, it is best to quickly rinse the meat and then coat thoroughly while still wet. It allows a heavier coating to stick to the fillets, this also works best for chicken breast, pork chops etc. after coating them, place them in a frying pan on the stove with just enough oil to cover the bottom. I generally use olive Oil but vegetable oil works great too. If you are using it on fish with a stronger flavour such as Salmon you’re probably better to use vegetable oil or something with a higher fat content as it helps to reduce the fish flavour. Cook the fillets in the oil until golden then turn once and cook the other side. Flipping it more than once will cause it to start breaking apart faster and easier.

I made the fillets and wasn’t overly sure how the younger 2 kids would like it as they have never really had fish other than tuna so there was lots of mashed potatoes and corn just in case. Turns out after cooking the fillets with the Lemon Pepper Panko it was hardly necessary to even have the other foods on the table, I bought what I thought would be more than enough fish and the kids devoured it. Madison who rarely eats any type of meat had 3 or 4 helpings. The panko gave the pickerel a fantastic taste and the perfect crispiness on the outside while remaining soft and flaky inside. I will definitely be using Progresso foods panko again the next time I get to make any fish for me and the kids.

We have not really used the cook book yet but honestly have been so busy that it is hard to make a nice meal for everyone.  We have looked through and picked out a few recipes that we will be trying once we have the time.
